So I just bought this massive contain of spinach and so naturally, I’ve been adding it basically anywhere I can!

I love this recipe for Spinach and Citrus Salad with Sweet and Spicy Almonds 🙂

This salad is such a yummy dish and you can make it for a quick lunch or supper side or add some shrimp for a quick supper – here’s the 1-minute video for that:

This citrus-y salad is a delish addition to any meal and packs extra nutrition with folate-rich spinach, vitamin C-filled oranges and healthy-fat nuts.

I had almonds on hand when I made this recently but feel free to choose your favorite nut – walnuts or pecans would work too :)

The toasted nuts with the rosemary and spice is super yummy and the citrus salad dressing is wonderful to have on hand – so refreshingly tangy.

You can double the recipe for the salad dressing and it keeps in the fridge for a week. I stopped buying salad dressing years ago because they always sounded good but I never got through a whole bottle of whatever I bought.

Salad dressing really is one of those foods that many people buy but is super easy to make.

Prep Time: 15 minutes Cook Time: 5 minutes Total Time: 20 minutes

Yield: Makes about 4 servings

Ingredients

  • 3 cups fresh baby spinach
  • 2 green onions, chopped
  • 1-2 oranges and grapefruits peeled cut into bite-sized sections
  • 1 tablespoon non-hydrogenated margarine or butter
  • 1/2 teaspoon sugar
  • 1/2 cup slivered almonds (you could use pecans or walnuts too)
  • 1 teaspoon dried rosemary
  • 1/4 teaspoon cayenne
  • Salt and freshly ground black pepper
  • Citrus Dressing:
  • 1 teaspoon Dijon mustard
  • 2 tablespoons orange or grapefruit juice (I used a combo of both)
  • 3 tablespoons canola oil
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper

Instructions

  1. Put the spinach and green onions in large salad bowl and sprinkle with the cut sections of grapefruit. In a small saute pan over medium heat, add the butter and sugar and stir until the butter is melted. Add the nuts you are using and toss until they begin to brown.
  2. Stir in the rosemary and cayenne and stir just a few seconds to release the aroma.
  3. Remove from the heat and season with salt and pepper, to taste.
  4. Sprinkle the nuts on the salad while still warm.
  5. Drizzle the dressing over salad and serve.
