Seriously, it feels like cheating.

Which feels great.

This recipe for Simple Slow Cooker Chicken with Chickpeas has a ton of flavour, it’s beyond simple to make (enter slow cooker) and it uses easily available ingredients.

There’s such a creaminess to it – thanks to the cream of mushroom soup – but without all the sluggish, heavy-gut feeling that comes from a super high fat meal.

Packed with healthy carbs, fibre and protein, there’s really nothing more to say about it.

So let’s cut the chit-chat on this one and get straight to the recipe 🙂

Simple Slow Cooker Chicken with Chickpeas


  • 4 boneless, skinless chicken breasts

  • 1 cup salsa

  • 1/2 package reduced sodium taco seasoning

  • 1 can low sodium cream of mushroom soup (not diluted)

  • 1-19 oz can chickpeas

  • 1/2 cup 1% sour cream

  • Cilantro to taste


  1. Add chicken to slow cooker

  2. Sprinkle taco seasoning over chicken

  3. Pour salsa and soup over chicken

  4. Cook on low for about 4 hours or 6-8 hours if chicken was frozen

  5. Pull chicken apart with 2 forks

  6. Stir in chickpeas and heat through (about another 20 minutes)

  7. Remove from heat and stir in sour cream

  8. Serve with chopped cilantro on top and a salad on the side
