Simple Baked Apples with Strawberry Oat Filling

It’s fall and it’s lovely.

I know a lot of people say their fave season is fall.

And what’s not to like?

More comfortable weather, chunky sweaters, cute boots, PSLs (pumpkin spice lattes!) and all things apples and pumpkins 🙂

Case in point:

My Simple Baked Apples with Strawberry Oat Filling!

These little guys pack quite the yum-yum punch.

Baked apples always intrigued me but not being the best cook on the block, I wasn’t sure if they’d turn out or if anyone would even try them (let alone like them.)

Thankfully, these got the “this is the best baked apple I’ve ever had” approval from hubby.

(I’m not sure what the count is on how many varieties of baked apples he’s had but I’ll take it.)

Many recipes for baked apples are simply the brown sugar so if you want even simpler than mine, go with that.

I added strawberries because well, I had some and why not?

And oats?

Well again, my not? 🙂

When you eat them, it’s almost like a mini apple and strawberry crisp!

I kept the “hats” for mostly picture taking so you don’t have to keep those on but maybe your kids will get a kick out of it too.

Or if you’re serving these for a get together this fall, keeping the “hats” offers a nice presentation touch (“oooooooh, fancy!” your guests will exclaim.)

Bottom line: a simple, healthy recipe “dessert” that you can throw in the oven and forget about it while you eat supper.

And forget about it quickly enough is great because your preschooler will start to loudly protest that the green beans are actually on his plate (again.)

These were a hit in my house and I hope they are in yours too 🙂

Simple Baked Apples with Strawberry Oat Filling


  • 4 baking apples (like Golden Delicious, Gala or Granny Smith)

  • Finely chopped strawberries (about 5-6)

  • 1 Tbsp of brown sugar

  • 2 Tbsp oats

  • 1 tsp vanilla

  • 1 tsp cinnamon and/or nutmeg

  • 4 tsp of margarine


  1. Preheat the oven to 350 degrees F.

  2. Roll the apple on its side and cut off the top half-inch or so. Save these hats. Scoop out the middle of the apple with a small spoon. Remove all the seeds and the woody core but try not to punch through the bottom.

  3. Combine strawberries, brown sugar, oats, vanilla and spices in a small bowl.

  4. Fill middle of each apple with the mixture.

  5. Top each with 1 tsp of margarine.

  6. Place apples in a baking dish, filled with a little water. Bake until soft - about 45 minutes.

    Another lovely recipe. I love how healthy and delicious it is. I do have a question about margarine in Canada. What is it typically made of in Canada? Here in the US, healthy guidelines typically tell us to avoid margarine as it is made with partially hydrogenated oils (trans fat). Is it different in Canada?

      Great question, Connie!

      Yes, more margarine in Canada is non-hydrogenated. You can get it made with canola or olive oil.

      Hydrogenated margarine is actually HARD to find! When I did grocery store tours,I would want to show people what NOT to buy and it was hardly around.
