I was so happy when my friend sent me a recipe for Asian Pork Lettuce Wraps.

I order this type of dish so often when we eat out.

And it’s in the appetizer menu a lot of the time but it’s usually meal-sized and full of deliciousness.

But when Kevin sent me the links to a couple variations, I thought: what a great recipe to try!

And that’s where this recipe for On Second Thought, Let’s Stay In Simple Turkey Lettuce Wraps with Peanut Sauce was born 🙂

These Simple Turkey Lettuce Wraps with Peanut Sauce are suuuuper yummy.

The only problem is: you REALLY can’t eat just 2.

Or 3.

Or 4…..

on second thought, let's stay in simple turkey lettuce wraps

I find that toppings for recipes are like accessories for an outfit: you can be fine without them, but they really make the difference.

And it’s worth the little extra washing and chopping.

The cilantro with the peanut sauce combined with the green onions and the cooked ginger really make a fab flavour combo.

Oh and the “Let’s Stay in” part?

Well, if you have young kids like we do, that line of thinking happens more than I like to admit.

Some nights, it’s easier and frankly more fun to stay in and play games or watch a movie all together.

(Side bar on movies – finally watched Frozen the other night. Some catchy tunes in that flick!)

The fixings really make this recipe complete, so grab the green onions, chopped salted peanuts and cilantro (assuming you like them) and you’ll get an amazing flavour combo.

Along with the fixings, the sauce really did it for me too.

Here’s a quick vid of me (and my helper!) putting it together:
